    Are you talking the trub of yeast and hops leftover after fermentation?  I wouldn't use that as a marinade personally.  I think you would get a funky bitterness from the hop trub that just wouldn't be nice once smoked. I would however marinate with a good IPA or DIPA on a more delicate meat...

    Here are mine. ABT's Jalapeno Pork Sausage Cream Cheese Bacon Shrooms Mushroom Pork Sausage Parmagiano Oregeano (sp i'm sure) Thats about it.  Smoked for about an hour.  Turned out great.

    Thanks guys.  It was probably the best butt i have done.  I don't use a finishing sauce, just feel that the pork doesn't need it.  I did use a mustard coating prior to rub this time, and seems to be the ticket.

    Thanks it came out well.  Told the wife that next time we will do an italian sausage sandwich fattie.  Gonna use italian sausage, stuff with grilled peppers and onions, mushrooms, and provolone.  Going to smoke some tomatoes and make some marinara with them.  This may happen sooner than planned.
