question about packing full a wsm

back before i got my WSM I did a few racks of ribs on my weber kettle. I took 3 racks of baby backs and layed them flat one on top of the other. Every hour I would go out, put the top one on the bottom of the stack, and spritz them. They came out great that way and took up no space at all...

    Extending the WSM

WOW, look at that thing! I can't believe it never dawned on me to use my weber performer as a bottom. I might have to try that out one day. after I get a ladder that is.

    Extending the WSM

Just a crazy idea I had, probably won't work, but I'm looking at this rotisserie attachment: http://www.amazon.com/gp/product/ima...86168&s=garden And thinking that it sure looks like you could put that on top of the WSM just under the lid to add a third smoking grate. filling in the holes...

    Friendship bread?????

I always thought the "starter" for friendship bread was just the bread yeast in sugary dough mixture. no real secret to it, just that it's the same yeast that has grown and reproduced over and over again, so it's hard to just make it from scratch. I've never actually made it though, I'm on a...

    Looking for a thermometer

My favorite thing about my ET-73 is the alarms you can set up. I can actually get sleep during an overnight brisket cook! On the smoker temp probe it has both a high and a low temp alarm, so I'll set the low temp at 220, the high temp at 240, and it will beep if it hits either. wake up...

    warm weather

Semper Fi! This country needs more good men and women to put the greater good before their own interests. I'd raise a toast to him right now but a beer at works gets strange looks.

    Brand new memeber complaining already

Welcome to the forums! I'm sure you'll find that it was worth the struggle. Now as for changing the registration procedures, the foolproof way to keep out spammers it to require everyone to smoke some meat, and mail it along with forum info to Jeff for manual data entry and review. hehe.

    WSM Owners

I read somewhere that people have done that the other way around, to use pork-dripping tastiness to keep the brisket moist. No idea if it actually works like that but I read it on the Internets so it has to be true.

Cajunator Smoker w/ Q-View-Designed by Zeeker

Wow, I gotta say that is an amazing piece of art right there. Your brother should be proud, that definitely looks like a labor of love. I don't know much about the BBQ equipment market, but I would think he could make some pretty good money selling those if he wanted to make more of them.

Weber Performer (22.5 Kettle fancied up) Questions

I've gota weber with the gas-starter thingy, and I love it. What I ended up doing is using the two coal baskets it came with long side in and pushed together in the middle. More or less making a circle. I put these two right over top of the vents for the gas starter, so one side starts one...

OLD COUNTRY BBQ PITS in Larado, TX

As soon as I saw that pic I thought it looked awful familiar. I looked around a bit and found what I was thinking of: http://www.tejassmokers.com/products/2040cc.htm Looks almost identical, and that one goes for $2500, so I guess $1500 is a good deal.

    Boiling Your Ribs Tutorial

Anyone else find it funny that she refers to them as "slow cooked" ribs? It only took 2 hours, I can't think of a way to cook them that would be much quicker.

Is There a GOOD Way to Make a Quick Brisket?

If you haven't seen it yet check out this post in the beef sticky about searing a brisket: http://www.smokingmeatforums.com/for...ad.php?t=51509 Not sure, but maybe you can combine that method with slightly higher temps to get a quicker cook.
