    Yeah, I have never had this from pork before. I'd do the two things mentioned above for sure.... try some naked ribs with no extra hullabaloo... and then blame the sides! Do you get massive gas too?

    Same here... if I am doing ribs just for my family ( wife & kids ) I don't trim... we love it all. But if the in-laws are coming over I trim them all up nice and pretty before smoking and keep all them extra vittles to ourselves!

    Welcome to SMF, one quick question... Did you just put one chimney in it or did you have unlit charcoal in the pan then poured the lit coals on it?  ( a'la minion method )

    When it comes to the high end pits it is exactly what garyt said... it's all in brand recognition and loyalty. They are all great and amazing pits and will last you a good long while. Klose, Jambo, Lang just to name a few... all amazing... all great... just depends on what floats your boat.

    I totally agree, the bung hole makes a great place for intake throttle, raises the coolness factor, and keeps you from having to re-bung the barrel. I don't think it would look as cool if you had to re-locate it, but figured if people run their intake throttles up the side for their UDS, why...

    I couldn't see down in it, but on your intake you could run piping on the inside down to fire basket level... maybe that would increase the performance even more without having to drill it any more.  Maybe you did this already though and I missed it.
