    First UDS Build

Apric. Hey it looks great......but it looks like you might have room to add a second grate right below the top grate....that would give you more area to cook more things when needed. Just my wooden nickel's worth of info zjbird

Mini UDS with help from Sawzall

The solid plate was from the bottom of the original smoker and placed there cause I couldn't find much on how to build a good diffuser.  It has since been removed and I am working on how to run my mini without a diffuser.  I miss the taste I get from the drippings on the coals.

    UDS table.

Have you ever thought of building a base out of angle iron and then welding/bolting some cheap harbor freight wheels to it.   I have done that in the past, I liked it cause the base was removable when I took the UDS to a remote location.

    Iowa Guy Her

IowaBrad.......raised near Lake Okoboji here Your question to Tropics is a good point.  The heat will affect the food and the smoking by cooking too fast if you don't limit it.  By reading thru the post you will see where people either use diffusers or water pans to suppress the heat from the...

I have done a few test burns and without the diffuser I struggle to keep the temps below 250 at the grate and the slider on the air take only 1/8" open.   With the diffuser, in place.  I hold very easy around 170 with the intake 1/8" open and with it 1/2 open it holds around 220.  I don't have...
