    Cooking on an Old Hickory like he does, there wouldn;t be as much need for foil I don;t think, because the carousel allows the rack above to self baste the lower rack. I wonder if it would be different if he were cooking on a unit without a rotisserie carousel. Did he say what temp he cooks...
