    Brinkmann Gourmet Smoker ??

    So far I have only cooked on the top rack of my brinkmann gourmet smoker. I would like to start using both racks since I am smoking anyway. Which foods do better on the lower rack, which is just above the water pan?

    Turkey question.. your opinion wanted

    I will be doing my first Thanksgiving smoke soon. Is there a taste difference between boy (tom) and girl (hen) turkeys? I am going to get a fresh turkey if they aren't too expensive. The frozen free range ones were $5 a pound (ouch)!!

    Tried my first cheese smoke. Let the mozzarella sit out for 3 hours to get a nice skin, then into the smoker for 1 hour at 150 with apple and pecan wood. Then back in the fridge for a few hours to firm up. Came out great!
