    OK, here's a question. Is it worth the trouble to spatchcock that poor bird, or not? If you did, would you brine it before or after? How would it affect the smoking time of a 12 lb bird at 275 degrees?

    Thanks. I have legs on the big smoker, so the cold smoker is a foot and a half off the deck. The smoke still goes into the main smoker when the cold smoker rotates, but it seems like an odd arrangement.
