The only time I had a hopper fire in my old Z Grill was when I shut it down from 400 degrees.
After that, I always went down to 180 in steps and then told it to shutdown.

Although the temp they reached does make them safe to eat, I think I would go with tossing them back in the oven to reach 203. I would think this would make sure they are nice and tender.
That's a good idea.
Using the entire propane system from a water heater would also provide positive gas shut-off in the event of the pilot flame going out for some reason.
Probably available at the Big Box stores.
