Thanks for all the input. Now I will tell the rest of the story about the smokehouse. The original builders of the smokehouse was a family of Wyandotte Indians. How did they do this back then?
My family owns rural property in Oklahoma that has an old smokehouse on it. And I do mean old. Dates from the early 1900's or late 1800's.
