Congrats on retirement and the Old Country! I got one just before Thanksgiving. Did a couple of turkeys for TG and did a 10# brisket flat for Christmas. Completely unwrapped, using a PitmasterIQ 120, set at 225 and pulled at 195, 19 hours later. Was near perfect, great taste and great bark, but...- Smokerdon64
