I can't speak to the rest of the questions, but if you want these to be yellow, add in a small amount of turmeric. It's not what your aunt would have done, but man that stuff will near turn anything it touches yellow.

I've tried overwintering a few of my pepper plants back when I was growing regularly. Everything was fine until around December when the aphids would emerge and decimate any new foliage that appeared. I abandonded the idea and went back to starting new each year.
What are you using to measure EC and pH?
I would also suggest using pH Down instead of citric acid to lower pH. Dedicated pH solutions are considerably more stable.
