    Temp sensor is place in a bucket of water, this enough thermal mass. When the unit is defrosting temp inside the unit rises to 10-12C over a period of 19 minutes. The water rises from 3C to 5.5C and the time to go back to 3C is several hours. Is this safe temperature to dry meat in?
