building and keeping fire in charbroil offset.

I have a couple of CharBroil Silver cookers and I've noticed that the way the cooker(s) are positioned to the wind makes a big difference. If the wind is blowing from the stack side to the firebox side direction, you'll have trouble getting and maintaining temps. I guess the wind goes through...

POLL: How do you make your ABTs?

I start with fresh Jalapeño peppers from my garden (store bought peppers work just fine as well). Cut the tops off at the stem end and use a potato peeler to core out the seeds and membrane. Put a small slit in the tip of the pepper for a vent to aid in filling. Fill a freezer baggie with...

    ABTs

I have better luck with an indirect method when cooking jalapeno poppers, ABT's or what ever you want to call them. I cook until the bacon looks edibile... about an hour or so. I agree with the statement about the longer they cook, the milder they get.

I'm just a regular guy who doesn't compete, but enjoy cooking for family and friends. I've been at it for...

Can't Get Temps Up High Enough w/Basket

Try turning your cooker's firebox towards the wind. I noticed on my Char-Broil Silver that doing that can help to regulate the cooker temps. If the wind is blowing in the opposite direction, the air goes in the chimney and out of the firebox. Of course there will be a happy medium this this...

    I can't get my smoker up to 225 F

I know this is a little late for this reply, but I've noticed that you can control the temps to a certain extent by how you position your cooker to the wind. Perhaps the 225* would be easier to reach and maintain if your cooker's firebox was pointed towards the wind. If the firebox is pointed...
