He has been doing it for a while. King grifter I call it sometimes. I like how nobody remarks about how he used GALVANIZED STEEL. Dude is using zinc coated metal near a high heat source. First of all he did absolutely no research on how to take the baffle off. You break the side welds then just...
Yeah it's one of those things you just have to mess with but I think you are right. The fat just renders at such a lower temp, like usual it's a little learning curve. The family was impressed for sure but I feel like it's wasn't exactly perfect or to my standards.
It was awesome.
Thanks! I did use butcher paper but in all honesty I think with American wagyu shouldn't even be wrapped. It was insane on fat marbling.
So I purchased my first offset, old country brazos dlx and I gave it a try. My plan was to start at 8pm and finish the 16.6 pound snake River farm black series wagyu brisket around 10am. The seasoning was John Lewis style with 8 parts fresh ground pepper, 3 parts kosher salt ,3 parts Lawry's...

I got this one used so she should be broken in...she has been with only one other guy and he took good care of her, but I'll do it better 😂. I can keep the suggestive personifications going but I'll leave it here for now lol

This solves alot of the problems. This is borrowed from b.sully on YouTube following Mike browns BBQ steps on youtube. Basically evens out the temps and pushes the hotspot in the smoke collector. Also apparently the regular brazos uses less thick metal on the sides. Mike brown said it was...
