    Injecting with tallow is a good idea. I would think that would help make up for the lack of marbling in the meat.

    I found a good deal on briskets at Kroger ($1.99/lb), so I bought several. However, they are "Choice". I tried to pick the best ones I could find hoping they would be close to "Prime." I've cooked a couple of them and both have turned out a little dry... The first one I cooked to approx. 165...

    Smoking a whole brisket

    I didn't have any issues when I smoked mine. I cooked the flat to 203 degrees, and it came out perfect. I don't remember the temp on the point, but I was very happy with the brisket.

    Grilled chicken on smoker, first try.

    I smoked some chicken breasts on my pellet smoker, and they came out like rubber. Any tips to make them better? I think I smoked them around 225-250. I didn't make any notes because they were so terrible I wanted to forget them. Haha
