    Our neighbor still has cows on his family farm and last year he gave us beef ribs because they don't eat them. I politely asked if I could get dino cuts next year? They just butchered two cows and I got a laundry basket of beef ribs and soup bones.

    17 # big box frozen turkey, dry brined in fridge for a few days. Got it on about an hour early.

    Turned out great, sliced it, did not pull it. Big issue - wind kept blowing out the grill, so I finished it in the oven.

    10:15, dropped temp a little, refilled pellets. Was running 250 on the dial, meat is at 114.

    I let it thaw in fridge so the top 1/8 inch was soft. Split it and froze half. Live 'n learn. Will cook tomorrow. Planning on 12 hours @ 250. Will get up @ 4, have it on by 5. Let it rest for at least an hour. No fancy plans on serving - just have a few people over. Plan a nap in there...
