    I’m with the other guys, but if you wanted some more opinion...for me I’d have wrapped in foil. Going to hot and fast generally means you don’t have the breakdown you’re looking for. So I’d wrap and if you need that bark you can finish off without wrap to firm it back up

    I’m a fan of the meater I only have the one probe myself but they have the block in that link. It’s a solid, reliable system and you could have 1 ambient foor each food item.

    Temp probes that can handle higher temps

    I use Meater every single time. They say the probe can go to 600 and change and I can attest to roughly that same temp when I do some thick steaks. Some of my cheaper probes may have held up from a sensor standpoint but they begin falling apart immediately.

    Thats frustrating for sure. I use a Komado myself so I don’t deal with the issue but I’ve seen others... the first suggestion is to put more heat mass in the grill, like a few bricks. This will help smooth out the peaks and valleys a bit and will also help in times of strong breeze or lid...
