    I did a quick search. kids want me to smoke another beef brisket. I am curious of other "less costly" cuts with similar qualities. will be smoking on an offset stick.

    i seasoned it pretty good initially with canola oil. had it about a year. just added the temp gauge and did put a passthrough temp port from a wsm like everyone else does. I leave it kind of dirty. mainly just knock the big globs and chunks off the plates and grates. then maybe a mop down...
