I think pans is mostly because they are lazy lol. I never use pans and I have had my gf for over 4 years. I do burn offs before and after and don't have an issues.
Yes i use flat sheets for a few things i have two each with a wire rack work great for stuff from bbq to carrying food to bacon.

Would really need an interior pics as beef ribs tend to look crappy on the outside. Sorry it didn't work out in your opinion though I had some failed cooks too it sucks lol. I cooked an olive fed short rib block when i first got my smoker. Wasn't cooked nearly long enough I had to trash it :<(
