I put two 4.5 lb butts in the smoker yesterday. Temps in the high 60's, low humidity.
Smoker banging along between 225 and 235, depending on how stiff the wind was blowing.

Assemble, as listed, from top to bottom.
Gutted hot water heater.
Racks from an old refrigerator.
Cast Iron pot (for wood chips).
Seafood burner.

Tools needed for assembly: 3 stupid teenagers.
If you have a "heat diffuser pan" as stated above, which is slotted, and sits
just above the burner spread some lava rocks on the bottom and stack some
above the slots (one layer high all around is fine).
