Hot smoker, I'll try to replicate american style BBQ/Smoking. But just maybe my design will allow me to use it as a cold smoker aswell if i'm lucky. But you are right, smoked fish is popular. My grandfather had a smoker for that. It had a a 4m / 13ft long smoke channel between the fireplace... -
