Why is this brisket cooking so fast?

No, I have an iGrill probe on the grate for the temp. I have been tracking the lid temp, and it is unreliable...sometimes right on, sometimes off by 30 degrees.

Why is this brisket cooking so fast?

Update 3.5 hours in...WSM at 260°F, brisket at 167°F. Checked and spritzed...meat feels pretty firm lengthwise, and didn't appear to look any different than the check the hour prior. I am definitely in the stall now, I guess my question is do I just stay the course (maybe cooking faster since...

Why is this brisket cooking so fast?

Hi all, I am in the middle of my first brisket cook on a WSM 18. My plan was to hold 255°F to the stall, then increase a bit to get through it. Wrap in butcher paper around 180°F and pull it off around 205°F. Brisket is smaller than many, 9.5 lbs., but is USDA prime. I trimmed maybe a pound...

    WSM First Smoke: Cornell Chicken

Hi, I had my maiden voyage last night with my WSM 18 with a Cornell Chicken cook. I used the recipe for the marinade/baste from pops6927 found here: https://www.smokingmeatforums.com/ams/firemans-chicken-variation-of-cornell-chicken.9894/ Bottom line: This was probably the best chicken I...

Where to buy an Old Country Pecos?

Thanks a lot for the information and the suggestion. I have spent all day today looking at information on the WSM and I think that might be a better first smoker for me than the offset. Certainly the offset has a certain swagger to it, but at the end of the day I just want to make good food...

Where to buy an Old Country Pecos?

Since I am really new to all of this, can you tell me what some advantages to a charcoal smoker are? It seems more "purist" to go with wood, but maybe that adds a lot of trouble?

    New Guy from Colorado

I am trying to find my first smoker, so I don't have a full answer yet. There is a place along the diagonal that sells oak and fruitwoods for smoking, so I think I will be in good shape there. Heading to dinner in Longmont in five minutes actually. :)

    New Guy from Colorado

Hi Everyone, I am just getting into home smoking and I just finished Aaron Franklin's Masterclass and I have also watched all of his videos from the PBS station KLRU. I am in awe of his capabilities and attention to detail. I see a trip to Austin in my future. I live just outside of Denver...

Where to buy an Old Country Pecos?

Hi Everyone, I just finished the Aaron Franklin Masterclass and now I need to find my first smoker. I think I am looking for the Old Country Pecos. I live in the Denver area--is there anywhere to get one locally? The only info I can find makes it look like Academy is the only place to get...
