Well i have had two of them. Never was totally happy with the product but as i get older staying up with a sidebox smoker has lost its appeal.
Reading about mods onthis forum got me thinking. I gutted out all the mes electronics and wired it up with a PID. Then took out the chip loader and did...
Well i wanted one i could trust anyway. One i had tested and was built for the punishment. Remember this controller uses a thermister not a thermocouple. I use the thermoworks smoke. I took the air sensor in that kit and installed it in the same hole as the original sensor. I used high temp...
The controller comes with a wiring diagram. What i did was drill out the pop rivits holding the back on and removed it. Took out all the original wiring. Where the power chord comes in i removed all that wiring and control board. Turned that into a junction box. With appliance wire, i used 12...
For $50 you can get a pid controller that will control the temp better than anything masterbuilt sells.
I gutted out all the original electronics and wired up this one.

And it works great
My opinion is if you burn the anodizing off those elbows they will quickly rust out. The smoke from the mailbox is not hot enough to break down the zinc coating. I would just run it for a 12 hr seasoning run. The inside will then be coated with creosote and seal up the zinc. Then you are ready...
The mailbox mod is the best mod i have done to my mes. Well that pid temp. Control is pretty nice too.
My ribs used to come out black. Look at the color of these ribs and turkey.
I want to thank everyone on this forum for this great idea and todd especially for the tray and pellets.
This has completely changed my opinion of electric smokers. I was about ready to junk mine and go in a different direction.
As for the stuff in the bottom of my mailbox it is hard as glass...
Been trying to work up the courage to smoke a brisket for years. With this setup i might just give it a shot. Mesquite would be at the top of the list.
Well i have had a mes30 for a few years. My second one. Always been a little dissatisfied with the quality of the product compared to my sidebox smoker but the set it and forget it of an electric is very attractive as i get older. It used to be fun staying up all night cooking. Not so much any...
Turkey is out of the smoker. Again i am totally impressed with the AMPNS. Always before chickens were black. Look at that color. I am going to cut a slice and check out the texture and smoke. Apple for this one.
I had to taste it. Moist and smokey with a little tang from the rub. I brined this...
Just finished up a smoke and cleaned mine. My bottom tray and the pizza stone over my element are covered with foil. Just strip it off and dispose of it. Pull the racks out and drop them in a plastic pan to soak and the bottom pan while i am at it. While the smoker is still warm wipe out the...
Man that is some nasty stuff settling in the bottom of my mailbox. Stained my fingers brown and it doesn't come off.
I suspect that is what was turning the meat black when using the chip loader
Looks like the mailbox and heater hose is acting like some sort of filter.
Do you clean that mess...
