This is a true statement "IF" you are using the factory control box to regulate the temperature. With a PID, you bypass all that and can go hotter. How hot, i do not know as i never run mine hotter than 275.
Get on facebook marketplace or craigslist and find someone locally getting rid of a 40". buy it, clean it, tear off the electronics. Get yourself either an Auber PID or make your own. Buy the Amazin of your choice. Smoke away.
Also, don't do the 30". I'm on my 3rd one and keep kicking...
I made one from an InkBird also after seeing what Steve H did. Haven't had a chance to use it yet though. Might have cost me $50 at most. I always keep random junk around.
I just bought the Inkbird ITC-106 with SSR. I'm collecting other components to get it all hooked when it comes in so i can put it on my MES 30. What would be the minimum gauge wire for power to the PID and smoker. I have 14ga on hand, but not sure it's heavy enough.
