    weber kettle temperature control

One of my favorite cooks is reverse searing Santa Maria style tri-tip on the kettle. Like the gent above said, I'll put a charcoal basket on one side of the kettle, fill it up, and place 6 to 10 lit briquettes on top of those, depending on the outside temperature. A wood chunk or two will go on...

    Cravings

Thanks. I usually go with thinner bacon myself, so it's easier to crisp up with a torch after it comes out of the smoker. The OPs pics showed some bigger cuts, so I was curious about what it was. Cheers.

    Cravings

Yeah, I know how to weave bacon. But thanks anyhow, pop.

I love the 45* slant bacon weave wrap; that's the most artistic looking fatty I've seen! Is that any particular brand/type of bacon your using?

    My first fatty

Hot Damn!!! I've been meaning to try smoking a 'cheese-burger' fatty, but this is going to make me get off my ass and actually do it! That looks amazing; nicely done! You take that to a Superbowl party, and you're going to be a legend.

    Dry Pork Butts, please help!

Thanks, will do. Thanks. At this point, I'm willing to sacrifice bark of juice. I gotta have that flavor.

    Dry Pork Butts, please help!

If you pan them uncovered, will all the juice just cook off?

    Dry Pork Butts, please help!

Thanks everyone for the input. Sorry it took me so long to get back to y'all. I went on a road-trip shortly after posting this. Maybe the water pan in the WSM is the problem. After getting all the replies, I did boil-test my Redi-Check thermometer probes, and they were surprisingly accurate and...

    Dry Pork Butts, please help!

The bone slides out clean, and the meat is tender. It's just not as juicy as it is when I do a smaller blade roast.

    Dry Pork Butts, please help!

Yes, I'm using a digital thermometer, and have boil tested it. I'm getting tender meat, I'm just not rendering near as much juice as I do with the blade roast to pour back into the meat.

Cooking over Charcoal = Toxic Masculinity?

That's where my wife and I are at as well.

Cooking over Charcoal = Toxic Masculinity?

Affirmatory. You're approaching feminine purity right there.

Been Working on my Presentation Game

Thanks for the compliments! I would have just said "thanks" in the first place, but I wasn't sure if saying 'thanks' to every compliment was looked down upon for cluttering the post.

Been Working on my Presentation Game

Thanks. I put down a layer of jalapeno cream cheese, crispy hash browns, salsa verde, cheddar cheese, and then roll it up. It sounds like a total mess, but it's delicious. I'd branch out with more traditional breakfast options, but I'm allergic to eggs (it's a curse).

Cooking over Charcoal = Toxic Masculinity?

That's part of what gets to me about this. If some corporation was telling us to temper "toxic femininity", the masses would be up in arms. However, somehow equating masculinity with toxicity is ok. If the message was: "demeaning behavior is wrong, no matter your gender traits," than there would...

Been Working on my Presentation Game

Fatty by Alpha Suerte posted Dec 29, 2018 at 6:20 PM I made this back on Christmas morning at the request of my son. I was a bit proud of the overall look of this one after finishing it off under the broiler while crisping the sides with a propane torch.

Cooking over Charcoal = Toxic Masculinity?

I was curious if anyone here caught the new Gillette Ad which encourages us to shed our "toxic masculinity," which apparently includes cooking over charcoal. I'm now on the brink of taking my Weber collection to the dump. Any advice?
