    What temp did you run your smoker at? I’m thinking making the turkey stall and 20 degrees outside temp may have something to do with it.

    I had it on breast and thigh turkey one and breast turkey two. I was also using a different thermometer for thigh of turkey two. All close to the same temp give or take 5 degrees I avg it to 155.

    Yes Chris when adding the wood or the extra lump coal I may have smother the fire and I was getting a white smoke and I believe the other mistake was keeping the exhaust vent 3/4 closed.
