We couldn't find yeast anywhere, until we visited the local Mexican grocery stores. They are still well stocked with 16oz bricks of "Levadura".
Levadura = instant bread yeast. ~Go shopping, good luck they were well stocked with tp as well.
If you can handle the drive to Chicago I'll have my whole crew set up for the Windy City Smokeout July 10-12th, great country music and BBQ with lots of cold beer it's going to be a great event.

I'm down to the bottom row of bags sitting on a skid I bought 4 years ago, stored in a shed but not especially sheltered otherwise they see the worst of the heat, humidity and cold as the seasons change.
No issues at all, they still burn fine.
No one can touch Shirley Fabrications insulated firebox with the live fire damper into the vertical cabinet.
You can run the main chamber at 225* and the vertical at whatever temp you want. Personally I like 350* plus for chicken and it does it easily.
I'm lucky enough to have both on my Shirley Fabrication pit, but I don't know of any other pit builder that can fab an insulated box and a warmer together.
I cooked on Lang 84's and 108's for some time with a 1/4" firebox and a warmer and I wouldn't be without a warming cabinet ever if it was...
There is a Lang 48 in bristol condition in the Phoenix area on the FB Lang owner's group for sale, bit more than your budget but that's a rare opportunity for a decent pit that far West free of freight charges.
No one's touching that pit for their first go around, flat out impressive! Sounds like it run's right up there with the best of them from any builder great job have fun with it and post some pics of cooks down the road.
I have a friend in Eurpoe who runs a Nette Lette, he is very pleased with the results and the quality is excellent he's had it for a couple years.
That BMS-5 sure looks like they build it right, the design and features are impressive. It would be a hard choice, either of those will produce...

It all looks great, next time you want to cook a feast bring it down and pull up a chair I'm running the big pit almost daily this time of year throw it on and pull up a chair.
There is always blow down hardwood available for free if you cut and haul it for the land owners, keep an eye on Craigslist and FB Marketplace.
The trick is to have a good truck and trailer and your saw's in top condition razor sharp and ready to cut first in get's the good stuff.
None, if I want salmon the river is in my back yard they pretty much swim to me these days lol.
I bought these things REALLY right, no comparison between a commercial slicer and home use variety but your welcome to take one home and try it out we don't use them much if ever these days.
