Two 6lb flats or a 12lb packer cut brisket for a party?
Thanks for the responses. I just got back from costco and bought a 13.5lb prime packer. I know you said not to separate it but the thing looks so big I'm not sure it will fit in my MES 30 if I don't separate it. I'm assuming if I keep it as one piece I should put the probe in the thickest part...- durrangojim
