    Fresh Ham for curing

Hi @tallbm i am doing your equilibrium brine on a fresh ham from a pig that we butchered this winter. I got the meat and water measured and the salt, sugar, and cure all weighed. I injected a whole bunch of the liquid all around especially near the bone. It’s in a 3gal freezer bag in the fridge...

Thinking of getting a Chevy Tahoe

I have had several (8) GM pickups with the 5.3 and only one (2009) had an issue with AFM that was covered under warranty. Just traded a 2022 for a 2025 a week ago. I have never had any issues with the engines or vehicles except the 2009 warranty claim above. Great vehicles if you ask me.

That is very kind of you! I would like to root for the Eagles but can’t because their fans are such jerks. So go Chiefs.

    Deer blade roast

Awesome!! Was wondering how you cut such a uniform roast from the front shoulder and then I saw bone in. I’ve never tried bone in venison. You taught me something new. Looks delicious. Thanks!

I think I may have discovered a new hobby. Much to Ann's dismay!!

My kid absolutely loves putting together legos. It’s good exercise for the brain. The only downside is the little buggars are super expensive here. Tell your wife that your new hobby could be much much worse 🤣

    Casings

It’s almost like the people at Walton’s are reading this forum. I just received this email.

    Casings

I email Walton’s reminding and letting them know everytime their competitors offer free shipping. I love their products but like you said, the shipping charges are ridiculous. Maybe if enough of us emailed them, they would offer free shipping more often like ps seasoning, LEM, and the sausage maker.
