    It turned out great, and I've since done a 15lb one. The second time I separated the point from the flat and removed a good bit of the fat. I smoked it for three and a half hours. Did the point in the SV at 155 for 36 and the point for 24 at the same temp. Haven't finished the point yet...

    Deal on butts at Harvey's and Bi-Lo this weekend

    Harvey's has twin packs (they were all 20-22 lbs) for .98 all week. Bi-Lo has butts on sale Saturday and Sunday only. Since the butts were so big I picked up three six lb individual butts at Harvey's for 1.18.

    Ribs day before vs morning of?

    Given the relatively short cook time I generally eat ribs the same day. In fact we will have ribs for dinner while the boston butt is still in the smoker. That being said I think they heat up really well, and if you don't mind that you may not have crispy bits I'd say do what is easiest for you.
