    Never heard of boiling the CB before smoking. I just cold soak with a couple water changes. Then season and smoke.

    Thanks! Yeah. The meat from this company does this for some reason. I wanted to keep it lower than this. It was still plenty tender and juicy.

    Same here. A while ago Piedmontese had 5 pound boneless sirloin on sale for 85.00. And for this quality of meat. It was worth it. I only wish I would have bought more than three of them. Thanks Keith!

    Been waiting to cook up some of these. Thawed out a 5 pound roast. And got 7 thick steaks from it. Tossed two on the Weber with charcoal and hickory chips. Pulled at 135. Rested for 10 minutes The carry over went to 142. Plated with tri-color taters. The purple taters look charred. But...
