I smoke my SS for around 6 hours, until I like the color, and then finish it to 155 in a hot water bath. Don't over heat the water temp, or it will fat out on ya. Then into the ice bath to stop the cooking. Just my way

They were the Clear casings. I even called Walton's about it. They weren't much help. They sed they twist link em all the time. I think it might have been a moisture issue, and when they had dried a little they were strong enough to hang. If I can figure it out, I will use the collagens alot...
I should add that I waited a day to smoke the hot dogs as I was smoking LJ and pepper stick on dowels also and had to wait until they were done to load with racks. If that makes sense.
I used the Walton's clear collagen casings for hot dogs last month. I found that I could not twist link them also. I ended up hand tying every 6 inches. Right after I finished linking, I tried to hang on my dowels to load in the smoker, and the links were breaking right at the ties. So instead...
When I do finish my pepper stick in the smoker, I do add a hotel pan full of water. Although I am not sure how much humidity it adds in my insulated reverse flow smoker.
I don't have any pics of the outside of smokehouse, but I do have a cool pic looking thru the door. Smokehouse is a block and concrete affair that is 30 or 40 years old. Gramps (not my real Gramps, but everybody calls him that) built it way back when he built the slaughter house.
I use 21 mm collagen casings from B&P an I like the way they come out. They plump up nice if I finish in water. I have peeled the casing off in the past if I finished them in the smoker.
