Hey everyone.
I live in Wisconsin and I am looking to smoke more meat. I have a Masterbuilt smoker that I have only used a couple times for chicken and salmon. My first few times worked out well. I just want to learn all I can about smoking.

I have a bunch of pheasants in the freezer and I am looking to smoke a few. Has anyone tried this before? I have done chickens, but they are more fatty than the pheasant.
