Lol, that seems like a lot of work! But very interesting! Omaha steaks aren't back, but the name they carry you'd think they were the best thing in the world. My favorite thing from them is actually country fried steak and gravy:D
Smoked a 6lb loin on the Weber kettle...
About a 3 hour cook, then 2 full racks of baby backs on my cheap offset, about 5 hours.... First time smoking ribs, turned out amazing!
Lol... Omaha steaks are a bit over rated! I've gotten much better cuts at the local stores! I keep the beef on the Weber, but love having two excellent options of cooking!
Hey, here is my reply to another post, but I think it would be relevant here also. I'm in Omaha, we topped out at 44 today, but I kept a nice hot smoker going for 5 hours and 2 full racks of baby backs today.
