Lifter meat on top of beef ribs??
I buy these beef ribs from a local butcher and the top cap is dry compared to the marbled meat below it. On Instagram, etc I search beef ribs and I'm yet to see a picture of someone's smoked ribs with it on top. Being a newbie smoker, am i to take this off and use it elsewhere and cook it...- DCBEXTREME
