It does make a huge difference, but I too have struggled mightily with getting the membrane off.

    Smokehouse Plans...

Sounds like a good plan. Not sure why you would want your coals to go on gravel. Seems like it would be a pain in the neck to clean up the ash.

    Long time no see!!!!

Been a long time since I've been on this board, but the cooler weather is coming and I'm starting to get fired up about smoking again!!! (no pun intended) Anyways, good to be back. Hope all of your smoking endeavours are as fun as mine and here's to an awesome fall and winter!

    I need a tiny smoker!!!

Wow! That's exactly what I had in mind. Thanks. I also might try Geek's idea this weekend. I've got plenty of pans to work with. I'm thinking I might like to try it with a glass pan on top so you can see what's going on inside!

    What's your occupation?

Accountant. And for the record, I skydive, play the guitar, own a motorcycle, have a girlfriend, and I hate math. Hope that dispels a few stereotypes.

    I need a tiny smoker!!!

Okay so I live in a condo and I'm looking for a really small slow smoker for my backyard. (actually its just a big field that I'm not technically supposed to use for grilling but....) Any of you guys know where I can buy such a smoker? I'm talking small. Something smaller than an ECB.

    stove top smoker ribs

I only use the stovetop smoker to do chicken breasts and fish. Never thought of doing ribs. Might have to give that a try!

    Tax and Book Keeping Software

As everyone else said, I would start with Quickbooks. Its super cheap, very user friendly, and is so widely used that you can ask your next door neighbor for tech support! If you need an accounting system with more sophisticated inventory/manufacturing/shipping/serial number tracking, I would...

Smoked Shrimp and Scallops with Sweet Garlic Rub

Besides being too spicy, how did those turn out? I've done many variations with smoking shrimp, but for me the best I've ever done has been a combination of smoking and grilling. I wrap place a roasted red pepper in the center of the shrimp, wrap the shrimp with a slice of prosciutto, and cold...

My new GOSM's very first smoke and the first time I used Jeff's rub.

Great looking piece of meat and a great looking smoker. Looks like you could fit a ton of meat in that thing for a big party! Grats!

Fat Free Cream Cheese in ABT's

One word....HORRIBLE!!!!! I dont know who talked me into it, but using fat free CC was absolutely disgusting. It tasted like burnt rubber! Oh well, no more skimping for me. My next batch of ABT's will be stuffed with cream cheese/cheddar and wrapped in double extra fat bacon!!!

    cinderblock pit cooking

Great job Cowgirl! If I had a backyard, I'd love to build something funky and cheap like this for smoking. No need to spend thousands on custom smokers when a good cinderblock/steel/wood structure can do just as good a job if not better!

    Super Bowl brisket w/ q-view

Oh my god that looks good. You have successfully convinced me to do another batch of ABT's this weekend!

    First ABT's q-view

Sorry for the late reply. I smoked them for about an hour and a half at 190. I think I could have gone an hour and they would have been fine. I cut mine in half, stuffed them with a cream cheese/cheddar mix, laid a lil smoky down the middle, and then wrapped the whole thing with a slice of...
