    That pork looks awesome Dave.  I am just south of you in Federal Way.  We have a local asian market that sells that seasoning, will have to definitely give it a try for mondays smoke.  Might even try it on chicken.

    It could be a couple of things.  One, are you letting the jerky rest before putting it into the ziplock bags?  After the dehydrator step I usually let mine sit in the trays after I turn the dehydrator off, placing the the trays side by side instead of on top, usually for an hour to cool it down...

    AMAZN arrived today

    It really depends on the cut of meat, if you smoke it wet or pat dry.  This batch was about 3 hours in the smoker and about 7 hours in the dehydrater.  I made some more the other day where they were only in the smoker and that was about 9 hours.
