    Brisket on the SmokeFire

Congrats Chopsaw! Looks like another sure fire winner! Please clarify one point for me--You wrap it in paper and put into oven at 350*. When the temp starts rising, you turn the temp to 325* AND OPEN THE DOOR. Do you close the door then or just leave it open? Silly question I know but I...

    Toohr #3 from Ali Express

I read here recently that someone mentioned the above knife sharpener, but now I can't find his comment that was buried in the post. Does anyone have any experience with this device? Youtube has a review and to me the sharpener looks well made--so I'm awaiting delivery of it!

Sorry to be so late in acknowledging, but this week has been disorganized, beginning with my wife's retirement on Monday. Adjustment has only just begun!. That is a beautiful property and smoker. I'm envious! You say you usually use dust as the smoke isn't as pronounced; to confirm, do you...

    HELP!!

Thanks Charles! I really like that Carrol quote about dogs. They are one of the few reliable beings in the universe. I have 3, a female yellow Lab, a sausage-style mini-wiennie and a rescue 50/50 pug and chihuahua, all completely spoiled and loving me! It just doesn't get any better than that!

CHASING THIN BLUE SMOKE , AVOIDING CRESOTE

I don't know anything about kettles other than they have an impeccable reputation and enormous following in the BBQ community. I guess I feel somewhat similar about my Good Ones (charcoal/wood burning). Different strokes for different folks!
