Thanks all! I love the Nebraska life out here and do everything from hunt, fish, garden, pick a slough of wild berries and wild mushrooms in the spirng and then cook, smoke, can or make wine out of anything I can get my hands on. Smoking a deer shoulder
I harvested 7 deer here in the state of Nebraska last year for my family and not an ounce of meat goes to waist. We smoke/ barbeque our hind quarters from the knee to the pelvic girdle as a whole hind quarter.
