Well just an update on the weekend smoke. I ended up smoking the turkey for around 6 hours and I must say it was some of the best turkey I have every had. I thought it was a bit (just a bit) on the salty side so I might back off on the amount of salt that I used but other than that it turned out...
Well I have brisket and pork tenderloin under my belt, time for some turkey! The bird is in the brine and it will be in the smoker around noon. 9lb breast should be done in time for dinner.
