Country Style Ribs - Two Ways

Those look great! We smoke CSRs quite a bit. I've noticed that some stores sell boneless cuts as "country style ribs" while others are bone in. We try to just buy the bone in style. I have to admit I'm ignorant as to what cuts these actually are. Anyone know?

    USDA minimum Corn Dog size?

Corn dogs are okay if you can't find a proper Pronto Pup.

I've decided to stop trying to keep my OK Joe firebox painted

That would work. You can also use sand paper, a flap brush, or an abrasive wheel, so long as it is truly non-metallic. Sometimes what we call "sand paper" actually uses aluminum oxide as the abrasive. You definitely wouldn't want to use that on steel.

I've decided to stop trying to keep my OK Joe firebox painted

I hit my FB with a coat of Rustoleum grill paint after almost every smoke. No issues with smell on the next cook, but the paint usually had 4-6 days to cure before the next cook. If I'm doing back to back cooks I don't paint in between. I hate to say this but the wire brush might be the source...

Fess up folks. Who besides me sniffs the smoke from the stack?

Yep, way better than sniffing glue. I've heard.

Sometimes feel guilty if only smoking a bit of meat

I do it all the time. It's not uncommon for us to fire up the smoker for a single chicken or fatty. It's just the wife and I so even then we have leftovers. Some people spend all day watching TV; I'd much rather crack a beer and watch the smoker.

Sources Of Free Wood For Smoking Meat

I'm in Oregon. We're famous for trees but not a lot of hard wood here! I have some apple and hazelnut wood from my back yard, and I can scavenge oak from some family acreage. Last year we got a bunch of free cottonwood from a neighbor, which we only use in our backyard fire pit. Free wood that...

    Please Itentify This Maple Leaf

We've been cooking with a lot of maple lately. I'm not sure of the variety because we're using mill scraps from a local furniture maker that mills their own lumber. It is indeed very mild, but it burns nice and hot. We like it. Yesterday we smoked a chicken and some country ribs with the maple...

    OKJ Highland Praise

That is an incredible price! Maintenance: the paint on the bottom and side of the firebox will burn through shortly, if it hasn't done so already. I keep a can of Rustoleum grill paint around and spray the bottom and sides of the firebox after every cook. I have zero rust despite the fact that...

Showing the OK Joe Highland mods I have done. Photo heavy. Thanks everybody.

Don, thank you for the update on the vent, great to hear real-world experience after testing. About the notches on the clean out door tab: brilliant! I'm definitely doing that.

Nice work! I'm really interested in the extra firebox intake that you installed. Does it seem to help with airflow? I wonder if it truly works as an intake, or do you lose some smoke and heat through the opening? I also have a Highland and feel the FB intake isn't large enough. I sometimes run...

Smoker from Oklahoma Department of Corrections

I'm pretty sure the OK Joe's smokers are made in China. The images on the DOC website appear to just be CAD drawings. It would be nice if they had actual photos. If the images they have can be trusted, it looks like the firebox is a single piece and is welded to the cook chamber. This is much...

Does the Lazzari have a strong mesquite flavor? That would limit it's application for me.
