    Honestly? You'll be fine. I would jockey the racks every hour or so. Once you get a good separation in the bend test, you could just wrap them and put them in the oven on the warm setting until ready to serve.     I'll be doing my 3rd brisket this coming week for a work part. I use Franklin's rub idea, just a Dalmatian rub. Just coarse salt and pepper. Photos to follow.

    New to the form, not new to smoking

    Hey folks, new to the form here! But I have the been making BBQ for a few years now. Started with a Weber kettle, then a Broil King Soverign XL 90, an electric smoker, then an Oklahoma Joe's offset, and now an Old Country Wrangler smoker.
