Does anyone use their MES to make jerky?

i do something similar for doing sausage.  I have a bunch of 1" x 1" x 1/16" aluminum angle cut to fit on the rack holders.  Works great and easy to clean.

    First Brisket - FAIL!

I may have been a little aggressive in trimming the fat, next time I make sure to leave more of the cap. The brisket grade was choice.  It looked like it had decent marbeling.  I was using my maveric et73 , thermopro tp20 along with the mes. Brisket was on the second rack from the bottom with...

    First Brisket - FAIL!

Well I tried smoking my first brisket this weekend.  FAIL!  I had decent bark and flavor, but it was pretty damn dry. I started with a 17# packer.  It went in  whole last night around 6:00 pm.  I seasoned it using nothing but SPOG (used cracked pepper). Smoked with a mixture of hickory and...

    In the smoker today

No way. My wife and daughters thought they were just right.  I'm into flavor with a little warmth, not a burning run to the hickory hole

    In the smoker today

No they were just perfect.  I used 4-5 habs, de-seeded and finely chopped.   It had just the right amount of flavor.

    In the smoker today

Today I am doing my first ABTs. The jalapeños are huge. For the stuffing we are using cream cheese, Parmesan cheese, 4 cheese Mexican blend, pepper, garlic powder, red pepper flakes and some diced habaneros. It tastes great as it is on a raw jalapeño. I also have a bunch of chicken wings...

    2017 Fattie Contest

As far as collections-donations go I would be more than willing to contribute. It was such a good time, I could not imagine that people would be taken aback by a small donation. I think we have all paid cover charges at bars....and that's a waste of money. I like the committee idea and I...

Masterbuilt Cold Smoker Doesn't work well when hot smoking

I have been using mine on my mes 40 for about a year.  The unit does seem to produce a heavier smoke in the beginning, and as the smoke comes to temp the output does seam lighter.  in reality it is producing a better smoke (thin blue smoke).  A little smoke goes a long way.  You do have to make...

Does anyone use their MES to make jerky?

I use my MES 40.  Just made 8# of venison jerky last week end.  I only make my jerky from muscle and never use ground meat.  I think it has to be easier to use muscle, no gun to clean, no need for extra trays etc.  I just use toothpicks and hang the strips from the smoker grates.  There are all...
