Bought a digital scale from Amazon and have some frozen salmon. With a 2% salt to fish weight ratio, what is your ratio for water (or whatever liquid you use)?
Say I kg of salmon, 20 grams of salt. How much water to make the brine?
Thanks. I use an Ohaus powder scale in an early stage of my meat procuring procedure and it is fitting to add a recipe scale to the meat cooking end of the process.
I used to live north of Omak across the line to the upper end of Okanagan Lake. Now live near the coast.
FWIW, I smoked some rainbow trout today that finally turned out just right salty, downright superb in fact. This posted in case someone wants smoked salmon that does not pickle one's tongue. As I posted earlier, every previous brine method that I've followed turns out WAAAAY too salty, much...
Man, that's a bummer if yours never worked. I live two or three miles north of the border just above Lynden, WA, no AC, climate like Bellingham with lots of rain the norm.
I MAY have maybe figured out the problem and a solution that has solved it so far.
The problem is apparently humidity and trace moisture that causes the controller to short out and shut off. A solution that has worked so far for me is to take the controller inside a climate controlled house...
Kurt, the connectors are a pain to unplug and require so much force and grip on the tiny latches that I have to take care not to suddenly jerk a wire loose. I am tempted to grind/cut off the little locking lugs since I am going to disconnect it each time. Far from ideal but so far it has...
MES Shutoff problem solved? Dry out the controller thoroughly, inside a house.
I disconnected and removed the defective controller from my Gen I Sportsman Elite. It looks like new. I put it on an out-of-the-way place on a counter in our kitchen for three or four days just figuring to install...
Good news, or at least interesting news. I got the old defective controller to work.
Mine is a Gen I Sportsman Elite, with controller unit on top of the smoker at the back: two screws and two electrical plug ins. I took it off of the smoker and took the controller panel inside our house. I...
Thanks for the info. There is an old thread on this topic of shutting itself off and I posted more direct info there. My model number is 20071914. Meanwhile I have phoned Masterbuilt and ordered a replacement control panel. Great gal on the phone, unusually helpful in my customer service...
My first four batches of smoked salmon have all come out too salty, even though I have cut back on salt each time. Have tried dry rub and brine methods and have concluded that for most recipes, the recipe maker likes it saltier than I do. I have been spoiled by the taste of old time smoked...
I discovered this forum because I am looking for a fix for the same problem. Mine is a 2 year old Elite Sportsman model 20071914 that has about a dozen smokes on it and suddenly yesterday shut itself off and did the click thing when I tried to turn it on again.
I phoned Masterbuilt, great gal...
You have already taught me some good stuff as I cruised around looking for help. I bought a Masterbuilt Sportsman Elite a couple of years ago mainly to smoke salmon, which we have handy here in Southern British Columbia, Canada. Have also smoked quite a bit of venison jerky and branched into...
