Thanks for all the help!  Masterbuilt shipped the replacement parts quickly and I got them today.  I first replaced the controller and that did the trick!  It's working like a charm and heating it's way through the 3 hour seasoning session as we speak!  I may have to throw a brisket in there...

Talked to Masterbuilt today.  Since I got it second hand there's no warranty but they are shipping a new heating element and control panel at a reasonable price.  Fingers crossed that does the trick!
