Decided to do a brisket for Labour Day... watch some CFL Football this afternoon..
Last brisket I did was an overnight one, going to try foiling this one.. see which we like better.
Also trying something new... using Hy's seasoning salt in place of regular salt, then normal Onion...

Bought a TP20 in May... did a few smokes and bbq's on them...
Started to do a brisket tonight and the one probe is showing 190 degrees outside when its a mild 70....
i switched the batteries.. nothing... i tried the other port.. same thing... i used a buddies probe and same thing...
Wrapped at 165* with a beer butter mixture in the foil. Pulled at 204*.
Amazing Butt! Everyone loved it. Full of flavor. We ended up making fresh rolls to have with it and a vinegar base coleslaw.
