    I only went 31 because it was my husbands bday dinner and my kid was coming home from college. I will def go at least 45 days next time.

    How do you cook your dry aged steak?

    Saturday is the day barring any obstacles! My soon to be 31 day dry aged Umai bag ribeye will be ready for devouring. How do you all cook your steaks? Grilling really isn't an option but I have a cast iron pan and a Sous vide IC. I want the best damn steak possible so what would you do? TIA!

    Yes. Saturday! If I can manage it, I will "try" to cut 3 steaks off and reseal to continue aging. I just can't compromise the bag. So we will see.
