Thanks Uncle Tork those are what I'm looking at getting. I had an oven thermometer on the grate and then the one on the lid but obviously the lid one was off. I felt like that was my biggest problem was not knowing the grate temp in real time.

b-one I used the rub Franklin uses on his rib video it's kosher Salt, pepper, garlic powder, onion powder, and maybe chilli powder and paprika. I used Hickory to smoke with.

I broke in the new smoker today on some baby back ribs. Like I suspect alot of new guys do I struggled with consistent temps and fire management. I was at a disadvantage from the get go as I do not have a digital thermometer yet but I have to say I really enjoyed it.
I got the ribs a little over...
I fired up the new Pecos today to season it, I have to say I am already enjoying tinkering with it and playing with fire.
I can't wait to try smoking some meat.

New guy with questions here.
I moved into our house about a year ago and cut a large Hedge tree down it has set for about a year now.
Could I use it for fuel in my offset? Then maybe add some chunks of apple or pecan?
I know it burns hot, likes to pop a bit just don't want to ruin meat if it...
Does anyone use the temperature gauges they sell for these, are they worth a hoot or should I just save my money and get a digital?

I got it cleaned up, sanded the rust off and hit it with some Rustoleum high temp paint. I plan to season it next week.

Made the purchase to day for an early birthday present for myself.
Went with the Pecos it had some surface rust so talked the manager down to $339.

I came home with a new smoker! My first ever, hope I can turn out some half decent bbq.
It's a little dirty and has some light rust I will need to paint but talked them down to $339 at Academy so I think I did ok.

I know this is probably been beat to death topic but any recent good or bad experiences with the old country smokers from Academy? I'm looking at the Pecos and Wrangler II models. Would the smaller cooking chamber of the wrangler be easier for me to manage temps in just starting out or harder...
I'm in the same boat, i want to pull the trigger soon on a smoker and can't decide.
I have been looking at the Old Country Wrangler II at Academy sports $299. I like the design, wish the steel was thicker. I hope to find someone on here that has one to give me a better review.
Thanks for the welcome Al, ya know I havnt really considered one. I had kind of had my heart set on a traditional offset but I will give them a look.
