Bone-in Pork Shoulder - Need some ideas for something other than pulled pork

Those chili recipes sounds great. I have a shoulder that I am going to smoke this weekend that is just under 10 pounds. I am thinking of using half for chili and the other half for pulled. How can I get one half to 180F for chili cubes and then the other half to 205F for pulling? Should I...

    Brisket Conundrum for Newbie

Thanks everyone. I think I am going to go with the smallest packer they have in stock and then trim to fit as a whole cut. When I was at Costco yesterday, the smallest one they had was around 15 pounds, if I remember correctly. If trimmed down to 11-12 pounds, is a cook time of about 16 - 18...

    Brisket Conundrum for Newbie

After some success smoking various pork cuts, I'm ready to venture into brisket territory. We are going on vacation and bringing my MES 30 along for the week. One of our guests requested a brisket and even said he would buy the meat. So, now I have a conundrum: a whole packer cut will not fit...

    Shredded beef sauce?

I started at 230 when I put it in overnight, but went to 250 in the morning. Eventually up to 275 for the last couple hours.

    Shredded beef sauce?

Here's the beef. Didn't get a pic of the pork. Somehow, the beef took 17 hours and the pork took 18. By the time they were done, guests were arriving, so didn't get good pics. Ended up using a mix of beef broth, Dale's seasoning, and melted butter in the crock pot with the beef. Just enough for...

    Shredded beef sauce?

I figured that question would come up. That is the chuckie. I used garlic, salt, and white pepper. The white pepper was mainly because i realized i had just run out of black pepper. The picture makes it look more white than it really was.

    Shredded beef sauce?

Personally, I like the slaw too. Not big in the north though (Wisconsin), so no one else would be on board. As for BBQ, I will already have some out for the pork, but this particular one doesn't go well with beef. The pork will have the sauce on in the crock pot, so putting a different kind...

    Shredded beef sauce?

I'm having people over for the fight tomorrow and I have a pork shoulder and a beef chuckie ready to throw in the smoker around midnight tonight. I've got the pulled pork down, but the only other time I tried shredded beef, I put WAY to much salt on and it almost inedible. I've learned from that...

Thanks guys! Looks like they both froze and got wet in the cooler on the way. Not bad, so fingers crossed.

    Looking for breakfast fattie advice

Well, I think this was more successful. They look good anyway. Curious to see how they will look when I actually get to cut them open. One thing I am worried about...I was pretty rushed getting ready for the trip and when I pulled them out, the internal temp was only 150 at the center. I had...

    Looking for breakfast fattie advice

My smoker is an MES with a water pan and I had the water pan full.  Being in the Wisconsin cold, any time I use the water pan, I can't differentiate between the smoke and the vapor, so no idea if I had TBS or TWS. I have everything made up and ready to go to try again soon.  This time, I made...
