The Shirley facilities in Tuscaloosa, AL are closer to Iowa than the Langs in Nahunta, GA.

FWIW I've had a Lang 36 that I thought was too small so I sold it and got a Lang 60D. The 60D has everything you said you really want but the reality for me was that it was more than I really needed.

I cleaned up from the last cook and am running some charcoal to dry everything out. I normally use local wood and run anywhere from 275 to 350 or so. This pit likes to run anywhere but is best at about 275 to 300. I feed it about every 45 minutes but that depends on the wood I'm using.
I realize that a free forum needs to post ads for revenue but the pop up bar on my lower screen each and every time I select a different thread is taking things to the extreme.
Is there a way to minimize the pop ups or must I donate $$$?
There are several fixes like that but I haven't found them very useful. Some have added an extension to the chimney to bring it down to the lower grate level. I did that but didn't notice any significant difference with my 60D so I took it out.

Not sure how you're measuring the temps but getting the exactly the same just isn't going to happen on any cooker that's 5' long. I run at about 275 ~ 325 with a 25 ~ 50 degree difference as measured by the 2 Lang thermometers but there's also the difference in location to consider. The one...
Be sure to take along a very large cooler if you go to Texas. Their brisket is usually less that $2 a pound instead of the $3+ we have to pay here in NE Florida. Our local walmart just went down to $2.99 from $3.50 a pound.
